Jean Louis Vermeil Cabernet Sauvignon
Vintage 2000
Frediani Vineyard |
The 1999 vintage
provided us with our first opportunity to work with the Cabernet
Sauvignon and Cabernet Franc from these particular
Frediani Family
Vineyard
blocks. Harvested, fermented, and initially barrel aged separately,
once the Cabernet Sauvignon (87%), and the Cabernet Franc (13%) were
blended, they were allowed additional barrel age to fully marry.
Dark purple and
initially closed, the wine opens to tar, cherry, cassis, and
licorice. Additionally, after 4 vintages with this Cabernet
Sauvignon block, we have come to expect an intriguing clove aroma
initially quite pronounced, which is brought into balance through
extended barrel ageing.
Sappy, young cherry
and licorice flavors, full body, moderate tannins, and a long finish
complete the experience. We believe this wine will improve
significantly with proper cellaring. French oak aged, bottled
unfined, and unfiltered.
